Grilled Peaches & Goat Cheese Salad

 

This salad is a delicious way to celebrate the summertime grilling season. It has ripe grilled peaches with a hint of char, goat cheese, crunchy almonds, red onion, and a light balsamic vinaigrette.

 

 

Ingredients

 

The Salad

·         4 each                   Peaches

·         4 oz                        Mixed Greens

·         2 oz                        Goat Cheese

·         One quarter        Red Onion, julienned  

·         3 oz                        Toasted Almonds

·         1 Tbsp                   Olive Oil, for grilling peaches

 

 

 

The Vinaigrette

·         4 Tbsp                   Olive Oil

·         2 Tbsp                   Balsamic Vinegar

·         1 Clove                 Garlic, minced

·         1 Tsp                     Dijon Mustard

·         ½ Tsp                     Sugar

·         ½ Tsp                     Salt

·         ½ Tsp                     Black Pepper

 

 

 

 

Instructions

 

Prepare the Salad

  1. Gather and prepare all salad ingredients.
  2. Preheat the grill to high heat (400F).
  3. Carefully cut around each peach and remove the pit.
  4. Brush the cut sides of the peaches with 1 Tbsp of Olive Oil and set aside.
  5. Once the grill is hot, place the peaches cut side down on the grill. Grill for 2-3 minutes, or until peaches soften and grill marks form.
  6. Using a pair of tongs, carefully remove the peaches from the grill. Set aside to cool, then cut the peaches into desired size.

 

 

 

 

Prepare the Vinaigrette

  1. In a small mixing bowl, add balsamic vinegar, garlic, Dijon mustard, sugar, salt and pepper. Whisk until combined.
  2. While constantly whisking, slowly pour the remaining oil into the bowl until smooth.
  3. Plate the mixed greens on a platter or individual plates. Top the greens with grilled peaches, goat cheese, red onions, almonds, and goat cheese. Drizzle the balsamic vinaigrette over the salad and serve.

 

 

 

 

 

 

Chef’s Notes

  1.  Use ripe, but not overly ripe, peaches. You can tell when a peach is ripe because it gives slightly when pressed and it has a sweet smell. You don’t want to use overly ripe peaches because they’ll become very mushy on the grill.
  2.  Be creative with other add ins for your salad. Here are some ingredients that can take your salad to another level:
    1.      Grilled chicken breast
    2.      Grilled steak
    3.      Grilled vegetables
    4.      Fresh corn
    5.      Avocado
    6.     Strawberries
    7.     Blueberries
    8.     Fresh basil
    9.    Mint leaves
