Fresh-cut French fries are something everyone loves. Growing up as a kid, I always loved when my mother made homemade fries — there was nothing better than fresh hand-cut potatoes.
· 2 each Russet or Kennebec potatoes
· 1 quart Vegetable oil
· To taste Kosher salt
All you need is a good baking potato. I personally prefer leaving the skin on for extra texture and flavor.
1. Start by cutting the potato in half, then slice it into even strips.
2. After cutting the fries, place them in cold water for at least an hour. This removes excess potato starch so the fries get crispy.
3. Once rinsed, lay the fries on paper towels and pat them dry thoroughly to remove excess moisture before frying.
4. In a Dutch oven or deep fryer, heat oil to 300F for the first fry. Fry for approximately 3-5 minutes. Fries should have a light color to them. Cool to room temperature.
5. Reheat oil to 350F and fry for additional 2-4 minutes or until golden brown.
6. Remove from fryer and finish with salt.
7. Serve hot with your favorite seasoning or dipping sauce.
· Kennebec potatoes are widely considered the gold standard for making French fries and potato chips.
