· Ground pork 1 pound
· Oyster sauce 1 tbsp
· Hot and sour soup mix 2 tbsp (optional – purchase from Asian grocery store)
· Soy sauce 2 tbsp
· Ginger, finely minced 1 tbsp
· Sesame oil 1 tsp
· Water 1 tbsp
· Sugar 1 tsp
· Green onions, finely diced ¼ cup
· White pepper ¼ tsp
· Potsticker wrappers 1 package, or more as needed
· Soy sauce 2 oz
· Rice vinegar 2 oz
· Sesame oil Splash
· Sesame seeds Pinch
1. Sprinkle green onion on top of pork.
2. In a bowl, mix together oyster sauce, hot and sour soup mix, soy sauce, ginger, sesame oil, water, sugar and white pepper.
3. Pour mixture on top of pork and mix thoroughly.
1. Fill a small bowl with room temperature water.
2. Take dumpling wrapper, use finger and water to create an outside boarder that is wet.
3. Place 1-2 tbps of dumpling filling into center of moistened wrapper.
4. Fold the dumpling wrapper in half like a taco, pinch together in center.
5. Start creating pleats to the left of the center pinch. Use your index finger and thumb together a pleat and seal it to the right. Continue gathering dough and gathering pleats until you reach the end. Repeat the process on the right side.
6. Place finished dumplings on a sheet pan and cover with moist towel until all dumplings are complete.
1. Heat a large nonstick pan over medium heat, add 2 tbsp of oil.
2. Arrange dumplings in pan – make sure they are not touching, but the pan is full.
3. Pan fry for 2-3 minutes, or until the bottoms are golden brown.
4. Holding pan with one hand, pour enough water to cover the pan – there will be splattering, so use the lid to block splatters.
5. Cover the pan and reduce heat to medium. Cook an additional 5-6 minutes.
6. Uncover and cook for another minute, or until water evaporates.
7. Serve with dumpling sauce, or sauce of choice

2. Chill slightly before serving
